Benign honney can be stored in good conditions not one year. Archeologist discovered than in Egypt was showed that honney can save it's taste for ages. It is explained by it's antimicrobial properties.

Honney has been used by ancient Egyptians and Greeks for preserving corpses. This type of storing food was good. The food was fresh despite the way it made.

The best way to save honney is in dried place in 5-10 degrees celcius. Keep in mind that it has a high hygroscopicity, therefore absorbs much moisture and may turn sour. Experiments showed that in high moisture, the honney's weight grows, cause of the water.
